There are some combinations that simply feel Italian. Fresh pasta made by hand, a glass of Spritz, a kitchen full of people and a table waiting at the end.

At La Soffritta Cooking School in Verona, we have brought these elements together in our newest cooking experience: Pasta Fresca & Spritz, a hands-on cooking class designed to combine traditional Italian pasta making with one of Italy’s most iconic aperitivo drinks.

A New Way to Experience Italian Food in Verona
A cooking class is not just about learning what goes into a recipe. It is about getting your hands involved, sharing the kitchen with other travellers and discovering food traditions by actually taking part.

Our new Pasta Fresca & Spritz cooking class in Verona follows exactly this idea. Over two hours, you’ll work alongside a chef and a small group, preparing fresh homemade pasta from scratch before moving on to the art of the Italian Spritz.

And, of course, there is an important rule at La Soffritta: once you’ve cooked it, you get to eat it.

From Flour to Fresh Pasta

The class starts with the basics of fresh pasta. You’ll prepare the dough by hand, learning how to recognise the right consistency and practising traditional techniques that have been part of Italian home cooking for generations. The recipe is not simply a demonstration to watch. You are the one making the pasta, with the chef there to guide you through the process and share the small tricks that make a difference.

The sauce changes with the seasons, following the availability of fresh ingredients. This means that the experience can also evolve throughout the year rather than being tied to one fixed menu.

Then Comes the Spritz

Once the pasta is underway, it is time for another Italian ritual: the aperitivo. But how much do you actually know about Spritz?

During the workshop, you’ll discover the differences between three of the best-known versions: Aperol, Campari and Select. The chef will explain how they differ in flavour and character, and you’ll prepare your preferred version while learning how to find the right balance between the ingredients.

It’s a small detail, but it says something important about Italian food culture: sometimes eating and drinking are not separate experiences. They are part of the same moment.

Cook, Sit Down, Share

When everything is ready, there is no rush to move on to the next attraction.
You sit down with the group, taste the pasta you’ve prepared and enjoy your Spritz together. The experience becomes less like a traditional cooking lesson and more like an evening spent around an Italian table.

That social element is an important part of the experience at La Soffritta. You arrive as travellers sharing a cooking class and leave having cooked, eaten and spent time together.

Take the Recipes Home

The experience doesn’t have to end when you leave Verona.

At the end of the class, you’ll receive a recipe booklet containing the preparations made during the experience, together with other Italian recipes to try at home. So the pasta you learn to make in Verona can become part of your own kitchen routine long after the journey is over.

E alla fine c’è anche un piccolo extra: un ricettario da portare a casa, così quello che si è imparato può tornare utile anche lontano dalla cucina de La Soffritta.

A Cooking Class in the Heart of Verona

The new Pasta Fresca & Spritz experience takes place at La Soffritta Cooking School in Vicolo Carmelitani Scalzi, right in the centre of Verona. The school is designed as a welcoming space where cooking is practical, relaxed and social, rather than a formal lesson for professional chefs.

The class is available in English, with a maximum of 8 participants, and can be booked throughout the year on selected days.
